If you are looking to whip up a fast and delicious breakfast you will love this super simple and easy banana pancake recipe. It may be quick and easy but, It does not lack flavor whatsoever!
- 1 Ripe Banana
- 2 Eggs
- 1/4 Tsp of Baking Powder.
These 3 ingredients will make delicious pancakes but I like to add other ingredients to the batter to take the pancakes to the next level and make them even more flavorful.
- 1/2 Tsp of Cinnamon
- 1/2 Tsp of Honey
- 1/4 Tsp Vanilla Extract
- Chocolate Chips
- Peanut Butter (1 Tablespoon)
- Cocoa Powder (1/2 Tablespoon)
Heat a pan to medium heat while you mix the ingredients together.
- Mash the ripe banana into a mixing bowl or measuring cup.
- I like to use a measuring cup because it is easier for pouring the batter on the stove.
- Once the banana has been throughly smashed, add 2 eggs and whisk them in.
- Add the Baking Powder and incorporate with the banana and eggs.
If you would like to add the Cinnamon, honey, and vanilla extract, please do so now and whisk all the ingredients together.
You can also add peanut butter or cocoa powder now too.
The consistency of the batter will be very runny and look like scrambled eggs. This is totally fine, this is exactly what it should look like. Don’t be scared like I was the first time I made these pancakes!
Butter your pan or use a greasing spray so the batter of the pancakes will not stick to the pan and slowly start adding the batter. The amount of batter you add will depend on how big you want your pancakes to be. I usually add 1/3 of a cup per each pancake.
Once the pancake starts getting some bubbles and looks like the consistency is hardening all around your pancake is ready to flip!
I like to add the chocolate chips to my pancakes once they are done and not when they are on the pan because I do not like melted chocolate or the mess the melted chocolate makes on the pan.
I also like to add the fresh fruit on top of the pancakes instead of in the batter but that is my personal preference. You can add chocolate chips and berries in the batter while the pancakes cook if you would like. Its all up to you!
